Bamboo Pith (竹蓀), Scallop (干貝), Chickpeas (鷹嘴豆), Daylily (黃花菜).
Step 1: Soak Bamboo Pith in warm water for 15 minutes and trim off the nets and the ends.
Step 2: Wash all ingredients. Optional: Blanch and add chicken (not included).
Step 3: With all the ingredients except Bamboo Pith in a stockpot, add 2-3 slices of ginger (not included), add 500ml (17 oz) of water and heat on high until boiling.
Step 4: Reduce heat to medium-low and simmer for about 1 hour. Add Bamboo Pith and simmer for another 10 minutes.
Step 5: Add 1 tablespoon of rice wine on high heat for 3-5 minutes, season with salt.
